Been meaning to try this place, interesting that they have traditional Italian dishes as well as Cantina choices. So glad I finally did yesterday. Everything was amazing. Ordered with friends, we all shared so we could get a taste of everything. We had beef tacos, pollo roulette, and tortellini carbonara.
Everything was incredibly fresh and seemed homemade, even down to the details like the sides. The leftover guacamole on the plate turned brown after an hour or so, which shows me it was fresh! Not a scoop of neon green stuff pumped with preservatives that came from a container.
The black beans that came with the tacos were amazing as well. They seemed to have been cooked with bacon as well as bay leaves? They had great flavor which I wasn't expecting from a place that does Italian food as well. So many Mexican places in the area seem to just throw a flavorless scoop of beans straight from the container on the side, which I end up throwing them out. Next time I will
have to order an extra side of black beans as well.
The tortellini carbonara was amazing, tons of delicious creamy sauce left over to dip the bread into after it was done. I could eat the sauce with a spoon like it was soup it was so good. The bread was nice and fresh too.
The pollo roulette was the thing I was looking forward to try the most, and I wasn't disappointed. The chicken was juicy, the spiniach tender. The mushrooms and brandy sauce had such a great flavor I could also take a bowl of them and eat them all up with a spoon!
I have a feeling that now I've discovered this place I'm about to get fat!
I did some research before ordering, and realized Diamond Spring is a pool club with an Italian resturaunt, outdoor Tiki bar, and Cantina. That explains why they have the fusion of Italian as well as Cantina fare, and excel at both!
The owner seems to take pride in providing a family type of atmosphere and plans tons of events. I'll be looking into joining the pool club this summer!

Cuban sandwich while not traditional, is DELICIOUS. super hearty and enough for two to eat.

Amazing food. Will definitely ordered from here again
